Who is Paleo Nick?‚Äč

Nick grew up on the border towns of Fargo, North Dakota and Moorhead, Minnesota, where he gained a healthy appetite and resistance to snow, wind and mosquitoes. 

He studied Culinary Arts and Electronic Business Management in Denver before attending the University of Alaska Anchorage for Hospitality and Restaurant Management and Spanish. He has spent the last 15 years between Minnesota, Colorado, Alaska and California.

Nick was exposed to CrossFit in 2008 when he worked as private chef for Lance Armstrong in Aspen, Colorado. Now infected by the fitness bug, he dove in head first and hasn't looked back. He has since opened four CrossFit gyms and earned various CrossFit and coaching certifications.

Nick has over 40 videos in the CrossFit Journal, runs a food booth at The CrossFit Games called "Paleo Nick's", and cooks bi-annually for the world renowned Power Monkey Camp. While he is passionate about food and fitness, he enjoys eating more than running.

Nick currently resides in Truckee, California with his wife, Jessie, and their two boys, Samson (8) and Jonas (5). He runs this website, which features instructional cooking videos based on the Paleo Diet. When he's not teaching others about nutrition and cooking, you can find him trotting the globe on one of his Culinary Adventures.   

Nick is a simple man who enjoys meeting new people, writing poetry, spending time with friends and family, and exploring the waters of Northern California in his Grumman canoe.
