Look around online for Paleo butternut squash lasagna recipes, and you’ll have no shortage of options. But any recipe starting with a disclaimer that it really can’t stand up to the original cheesy noodle-filled monstrosity, or warns you this recipe is a real labor of love, well, that’s a recipe we don’t want to make.
This one, though. Wow.
Today, we’re throwing it back to Nick’s butternut squash lasagna recipe, and we kid you not – this thing is flavorful and meaty, calling for perfectly sliced squash, fresh basil, garlic, a tomato medley and onions. On the protein side, there’s a one-to-one ratio of Italian sausage and ground beef. Toss in some kosher salt, black pepper, red chili powder if you like some spice, and olive oil, and that’s all she wrote.
Simple yes, but wildly effective. Nick’s got it all figured out, balancing out the mild flavor of the squash with a meat sauce that’s generously seasoned. It all comes together with a bit of Nick’s Massie Mayo – remember that? – for a lasagna that’s seriously on point, Paleo or no. Fall is in the air, and lasagna is big-time comfort food. So go for the nutrient-dense version with Nick’s butternut squash lasagna, and make no compromises.
