Paleo Pastel de Papa (Potato Pie)
While working as a Private Chef, one of my clients was a family from Argentina. One of their favorite make-ahead-meals was Pastel de Papa. When they first requested it, I had only tasted it once before. While living in Alaska, my Argentinean friends, Castro and Nicolasa, invited me over for some Mate and Pastel de Papa. All that I remember was that I liked it. So, I did some research, began preparing it weekly, and fell in love with the dish.
While brainstorming some make-ahead-meal ideas that were in line with the Paleo and Zone diets, I quickly thought of this dish and how simple it would be to sub the potatoes for sweet potatoes or yams. The rest is history...
Now, this is a go to dish for me. I make large batches every 1-2 months, freeze them, and integrate them into my weekly menu. I hope that you enjoy this dish as much as I do and that it soon becomes a staple in your freezer!
